Brownies and Smoothies! Sweet Treats with Simple Recipes

Sweet Simple Treats

These smoothies are healthy and also great for picky eaters!

Cherry Vanilla Smoothie

 Serves 2

Blend together:

1 cup apple juice or cider

1/2 cup low-fat vanilla yogurt

1 tsp. vanilla extract

1 1/2 cups frozen pitted cherries

Pink Banana Smoothie

Blend together:

1 cup apple juice or cider

2 ounces soft silken tofu (1/2 cup)

1 cup frozen strawberries

1 frozen very ripe medium banana

Pineapple Crush

 Blend together:

1/2 cup orange juice

1/2 cup pineapple juice

1 cup frozen pineapple chunks

1/2 frozen very rip medium banana

Peanut Butter Chocolate Chunk Brownies

These are extra-moist and chewy. May be frozen.

Makes 16 brownies

Prep time: 20 minutes

Total time: 45 minutes

Ingredients:

6 tbsp. unsalted butter

¼ cup light brown sugar, packed

2/3 cup peanut butter

2 eggs

1 tsp. vanilla extract

1 cup all-purpose flour

¼ tsp. salt

1 cup semi-sweet chocolate chunks

½ cup peanut butter chips

1. Preheat oven to 350°F. Line an 8-inch square baking pan with foil so that the foil comes to the sides of the pan and overhangs slightly.

2. In a medium saucepan over medium-low heat, melt butter. When it's melted, remove the pan from the heat and whisk in the sugars and peanut butter until the ingredients are all incorporated. Let stand about 5 minutes to cool.

3. In large mixing bowl, whisk the eggs, then whisk in the vanilla. When the peanut butter mixture is cooled, stir it into the eggs until smooth and incorporated. Stir in the flour and salt, then stir in chocolate and peanut butter chips.

4. Spread the batter in the prepared pan, smoothing the top. Bake for 30-35 minutes or until just set. Place on a rack to cool.

5. When the brownies are cool, turn onto a cutting board. Peel off foil, turn them over, and slice into 16 squares.
